Well, as far as an anime series, Hellsing is my favourite. The only thing that comes even close, for me...the original Aeon Flux stuff from Liquid Television. DeathNote is looking promising, though. Anime movie...probably Nausicca, from Miyazaki. Though ALL of his stuff is awesome.

Mmmm.... series well...: Konjiki No Gash Bell (Zatch Bell, I put the Japanese title to imply that I watch it in Japanese subbed, not the crappy American dubbing.) Is good for some fun mindless entertainment. Noir is a really good series too after it picks up.... Evangelion is ok but way overplayed....
And Movie, hands down is: Grave of the Fireflies

I have four right now: (including a brief explanation if you haven't heard of it) Full Metal Panic! -Mercenary mech pilot goes undercover in a high school.
Planetes- One of the best shows I have ever seen set in a realistic future about space debris haulers and would be my pick to show to anyone who thinks that anime is just pokemon or DBZ.
Fate Stay Night- About mages in a tournament for the Holy Grail. Its clever play on myth and legend from around the world should be of note here.
and then there's Gurren Lagann. I've never seen a show cover so much ground in such short amount of time while remaining incredibly entertaining.

I've seen a few good series, but one that really sticks out in my mind as faourite would be either: Noir or Konjki No Gash Bell (ZatchBell, but I watch it in Japanese /w subs... I cannot stand it dubbed) or DevilLady Evangelion is always good too...

I'd have to say Full Metal Panic, Tsubasa Chronicle, Gungrave, Hellsing Ultimate, and Ghost in the Shell. Mononoke and Howl's Moving Castle are my favorite Miyazaki films, and I never really liked Naausica for some reason =/
I like over the top action scenes, and comedy, which is probably why the Hellsing OVA series has always sparked interest in me.
I didn't like the Devil May Cry anime though. I was hoping for something a bit more tied to the game series, maybe a bit more information on DMC4, and better action. It also seemed like they brought back the quiet Dante from DMC2 (which doesn't actually exist >> if you catch my drift).

I:m currently watching BACCANO! and Darker Than Black.

The story of BACCANO! revolves around a bloody train robbery that occurs in 1932 America. Either by fate, or mere coincidence three infamous mafia families board The Flyingpussyfoot to compete for the trains heralded prize. What is even more surprising is the calamity that will occur on this train has been choreagraphed since 1711. I forgot to mention that more than a few of the main characters have existed for centuries, but this isnt a tale of vampires. Gorgeous animation and possibly the best fight scenes to grace the anime genre.

When the Devil May Cry anime falls short in the action department, you know its in trouble. The enemies are generic ghouls. (bleh)

Hey, if you liked Planetes, the director of that show (Goro Tanaguchi) did an awesome and under-rated action show called GunSword, which I love alot as well. It was unfairly avoided because it looks like a "Western-targeted program" (Yet people have no problem with more "slice o life school girl" shows and "yet another whiny punk kid in a giant robot" videos.)
For a show that could easily fall under cheap action cliches and one dimensional character traps, GunSword really surprised me with making the characters more than silly jokes or easy excuses for action sequences.
Sounds like Devil May Cry was just written for the Yaoi crowd, like what happened with GunGrave: For a bad ass game about shooting up crazy monsters in cool ways, the anime had incredibly lame fights and even weaker monsters (especially when they could have easily borrowed designs from the already released game) in the second half. It loses extra points by turning the sweet girl in the game into an obnoxious little tramp (another sure Shonen-Ai sign: they kill off any friendly girl who interacts with the hero and for the ones they don't kill off, are written in ways you wish they died. Kinda funny when you think about it.) The story should have ended in the past and allowed the game to tell the rest of it. I digress.
Dante's quiet again? Don't they know the reason most people like him is because he's a hotshot jerk who can't shut the hell up?

I agree about Gungrave. I think it's better to have over-the-top action sequences (alla FFVII: Advent Children) than to have poor boring action scenes like Gungrave did. I plenty enjoyed the beginning of the series, the whole mob anime thing, I hadn't seen much of that and I thought it was really cool (kinda made me think of the Godfather somewhat). Then the whole Beyond the Grave part at the end ruined it, should've ended in Brandon's death and then pick up in the game.
A friend of mine has started making me watch Fushigi Yugi. It feels reminiscent of Dragon Ball Z a little bit (replacing the screaming with romance segments). Despite it being a romance, it's actually pretty funny. It also pokes fun at gay people >> I've oddly enough, found myself liking it, go figure.
Another good series is xxxHolic...and by series I mean the movie and manga, not the animated series. The anime series leaves so much out from the books. It's got a strong hand in philosophy, being based of fortune telling and spirits. It's a crossover series, serving as the bridge between all of the clamp series, even being a direct cross between it and Tsubasa Chronicle. If you read/watched Magic Knight Rayearth, Cardcaptor Sakura, x/1999, Chobits, or any other Clamp works, you'll probably get more enjoyment out of it because you'll get all the inside jokes and references.
